Fluffy pear pancakes with honey

Ingredients

  • 2 Migo® pears

  • 125 g flour

  • 1 tsp baking powder

  • pinch of salt

  • 1 tbsp sugar

  • 1 egg

  • 200 ml milk

  • 25 g melted butter

  • 50 g full-fat quark

  • 4 tbsp oil

  • 4 tbsp honey or syrup

  1. Cut the Migo® pear lengthways into thin slices. Remove the pips from the slices with the core.
  2. Sieve the flour with the baking powder, salt and sugar into a mixing bowl. Loosely beat the eggs together with the milk and melted butter, and add the mixture to the flour. Beat the mixture with a whisk until smooth, then mix in the quark. If the dough is too thick, you can thin the mixture with a little milk. It should drop easily from a spoon.
  3. Heat 1 tbsp of oil in a large pancake pan and add three slices of pear. Pour over enough dough to form pancakes of about 10 cm in diameter with the slice of pear in the middle. Fry the pancakes over a moderate heat for about 3 minutes until golden brown. Carefully flip them over and fry for approx. 2 more minutes on the other side. Follow this method to make 12 pancakes from the dough and keep the prepared pancakes warm wrapped in aluminium foil in a pre-heated oven at 70–80 °C. Serve the pancakes with honey or syrup.
